Low-carb alternative!!!


Are you looking for a low-carb alternative to the twice baked potato? Well, I found the answer!!!

Twice Cooked Cauliflower

Ingredients:
1 head cauliflower, trimmed and cut or separated into sections
1 tablespoon butter
4 ounces cream cheese
4 or 5 ounces sharp cheddar cheese (about 1 1/4 cups), grated and divided
Salt and pepper to taste (may need none at all)
2 ounces bacon, fried crisp and crumbled

Directions:
Heat oven to 350 degrees F. Butter a casserole dish and set aside.
Steam cauliflower until tender; drain, then mash well with butter, cream cheese and 4 ounces (1 cup) of the cheddar cheese; salt and pepper to taste.

Spoon into prepared casserole dish, topping with crumbled bacon and remaining cheddar cheese.
Bake until casserole is well heated and cheese on top melts, about 5-10 minutes.
