Copycat Taco Bell Chalupa
Taco Bell Chalupa Indian fry bread:
2 1⁄2 cups flour
1 tablespoon baking powder
1⁄2 teaspoon salt
1 tablespoon vegetable shortening
1 cup milk
oil (for deep frying)
Taco Bell Chalupa Supreme filling:
1 lb ground beef
1⁄4 cup flour
1 tablespoon chili powder
1 teaspoon paprika
1 teaspoon salt
1 tablespoon dried onion flakes
1⁄2 cup water
oil, for deep-frying
shredded cheddar cheese or monterey jack cheese
To make Indian Fry Bread Mix dry ingredients together.
Cut in shortening; then add milk.
Shape dough into a long cylinder; cut into 8 equal parts.
Flour hands, then work the pieces into 6" tortillas.
Fry in oil until golden brown.
To Make filling Mix dried onion with water in a small bowl and let stand for five minutes.
Combine ground beef, flour, chili powder, paprika, and salt.
Add onions and water.
In a skillet, cook beef mixture until browned.
Stir often while cooking so no large chunks form; it should be more like a paste.
Remove from heat and keep warm.
Build Chalupas starting with meat, then sour cream, lettuce cheese, and tomatoes in that order.
Top with hot sauce or salsa if desired.

Have you ever listened to a song and thought... wow that sounds like it wasn't written about me? Well, that is exactly what I thought when I heard this song for the first time.
I was talking to a friend earlier today, and we were talking about the word hope. And she said that what we think is what determines what will happen to us. I'm trying to remember her exact words, but I'm drawing a blank. Anyway, I never thought of it like that, until she said that to me.
For example, if we think positive thoughts, positive things will happen to us. And if we think negative thoughts, then negative things will happen to us.
Do you ever talk to someone and they say something and it completely changes your outlook on everything? I'm not big on talking on the phone, but I think that is going to change. One conversation with someone can help your whole outlook on life and can change your entire day.

These last few weeks, I've been brainstorming like crazy. I've been trying to think of idea's that will help me further reach my goals. My first major goal is to overcome the obstacles I am facing to reach those goals.
I know some of you don't know me all that well so I wanted to share a little something personal about myself.
I am 34 years of age. I am currently disabled, permanently according to my Doctor's diagnosis. I refuse to believe that. I guess it's the stubborn part of me kicking in. So as you may know, I live on disability, so trying to live a healthy and comfortable life isn't the greatest. The only good part about my disability benefits is the medical coverage I receive, it's really good. It's the income part that is really giving me hardships.
I want to work, but my Doctor's refuse to release me. So the next best thing for me would be to work from home. One little snag, I never have the money to start a new home business. I am a rep for Avon, but that hasn't really taken off, not by a long shot. And I have skills as a freelance graphic designer, but finding clients is a real challenge. I really would love to become a beach body coach, not only for earning extra income, but I want to try and see if I can use some of their programs to help with my health issues.
I have thought about starting a gofundme campaign, but I am not sure if I would receive any support in that regard. I plan to pay it forward once I get myself out of this slump. But I know that people who don't know me are really reluctant to help because of all the dishonesty in the world. So I'm not sure what to do about this, any suggestions?
I know this isn't a weight loss related post, but it is health related so I thought I would ask for some advice here.
Do you have any suggestions?
